Heirloom Tomato & Peach Salad with Almond Cheese on Grilled Bread



Heirloom Tomato Salad

1-pound Heirloom Tomatoes

¼ cup sliced shallots

1 cup basil

4 tablespoons balsamic vinaigrette

3 tablespoons olive oil

3 sliced ripe peaches

2 tablespoons chopped chives

freshly ground pepper


Rough chop the heirloom tomatoes.  Toss all ingredients, except the basil, in a bowl. Let marinate for 30 – 40 minutes.


Almond Cheese

2 cups slivered raw almonds

2 tablespoons fresh lemon juice

3 tablespoons sunflower oil

1 cup water

1 ½ teaspoons sea salt


Put the almonds in a large bowl and cover with at least 2 inches of water.  Let soak overnight.  Rinse and drain the almonds


Transfer the almonds to a food processor.  Add the lemon juice, sunflower oil, water and salt.  Blend until smooth, 8 to 10 minutes.  Transfer to a bowl and refrigerate for 1 hour.  The almond cheese will keep, covered, in the refrigerator for up to 2 days.  



1 Baguette


Slice the baguette.  Grill on flat top with olive oil and black pepper


Spread the almond cheese on the bread.  Top with one basil leaf.  Top with a ~1 tablespoon of heirloom tomato salad.  Drizzle with olive oil and black pepper.  Enjoy!
